Bitter Gourd Con Carne

Marinade a kilo beef strips in a mixture of a tablespoon of corn starch, two tablespoons of soy sauce, two tablespoons of sesame oil and few slices or almost half of 8 inches long ginger. If possible, pound ginger to let its taste bind with the beef. Just marinade the beef for about 30 minutes or so. Heat ¼ cup of vegetable oil in a pan. Put the beef and let it stay in the pan until it turns brown and remove when reasonably brown. Set it aside. Using the same oil, sauté two tablespoons of minced garlic and remaining ginger, sauté until the garlic is golden brown, at this point you may add ¼ cup of chopped onion, sauté until onion becomes transparent. Add 2 to 4 pieces of bitter gourd deseeded and sliced. Add beef and a little bit of water mixed with a teaspoon of cornstarch (thickens sauce) and soy sauce (colors sauce). Simmer for about 3-5 minutes. Add ¼ cup of canned black beans. Turn the heat off when it boils.
